Si vous vous y mettez maintenant, ce sera parfait pour No\u00ebl ou la Saint-Sylvestre.<\/p>\n<p>J\u2019ai d\u00e9ball\u00e9 aujourd\u2019hui un\u00a0<strong>magret\u00a0 de canard s\u00e9ch\u00e9 au\u00a0<\/strong><strong>poivre blanc de B\u00e9lem<\/strong>. Le magret reste dans du gros sel une nuit, puis est lav\u00e9, frott\u00e9 avec un poivre de qualit\u00e9, puis s\u00e9ch\u00e9 pendant une dizaine de jours minimum.<\/p>\n<p>Coup\u00e9 en tr\u00e8s fines tranches, ce magret de canard est top sur des toasts ou dans une salade verte.<\/p>\n<p>Le\u00a0<strong>poivre blanc de B\u00e9lem<\/strong>\u00a0a un doux parfum bois\u00e9 et citronn\u00e9, parfum\u00e9 avec une pointe de r\u00e9glisse, le piquant monte progressivement en bouche, un vrai d\u00e9lice quoi !<\/p>\n<h2><span style=\"color: #339966;\"><strong>Ingr\u00e9dients de la recette de m<\/strong><strong>agret s\u00e9ch\u00e9 au poivre blanc\u00a0<\/strong><strong>:<\/strong><\/span><\/h2>\n<p>&nbsp;<\/p>\n<p>&#8211; 1 beau magret de canard<br \/>\n&#8211; 200 g de <a href=\"https:\/\/www.epicesdumonde.com\/sels-du-monde\/207-gros-sel-de-guerande-aux-herbes-de-provence.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #339966;\"><strong>gros sel de Gu\u00e9rande<\/strong><\/span><\/a><br \/>\n&#8211; et pour finir 1 c. \u00e0 soupe de\u00a0<a href=\"https:\/\/www.epicesdumonde.com\/autres-poivres\/309-poivre-blanc-de-belem.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #339966;\"><strong>poivre blanc de B\u00e9lem<\/strong><\/span><\/a><\/p>\n<h2><span style=\"color: #339966;\"><strong>Pr\u00e9paration de la recette de m<\/strong><strong>agret s\u00e9ch\u00e9 au poivre blanc\u00a0<\/strong><strong>:<\/strong><\/span><\/h2>\n<p>&#8211; Commencez par d\u00e9poser un lit de gros sel dans une boite de type tupperware rectangulaire de type \u00ab\u00a0bac \u00e0 glace\u00a0\u00bb.<br \/>\n&#8211; D\u00e9posez ensuite le magret de canard c\u00f4t\u00e9 peau sur le lit de sel.<br \/>\n&#8211; Recouvrez le ensuite enti\u00e8rement de gros sel et tassez \u00e0 la main afin que le sel adh\u00e8re bien \u00e0 la chair du canard.<br \/>\n&#8211; Fermez bien la boite et laissez reposer au r\u00e9frig\u00e9rateur toute une nuit.<br \/>\n&#8211; Retirez ensuite le sel et lavez le magret sous l\u2019eau froide. S\u00e9chez-le bien \u00e0 l\u2019aide de papier absorbant.<br \/>\n&#8211; R\u00e9duisez ensuite le poivre en poudre dans un mortier ou \u00e0 l&rsquo;aide d&rsquo;un <a href=\"https:\/\/www.epicesdumonde.com\/42-moulins\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #339966;\"><strong>moulin \u00e0 poivre<\/strong><\/span><\/a>.<br \/>\n&#8211; D\u00e9posez ensuite le magret de canard sur un torchon propre et sec.<br \/>\n&#8211; Puis saupoudrez le c\u00f4t\u00e9 chair avec le poivre blanc moulu.<br \/>\n&#8211; Enveloppez le ensuite avec le torchon en serrant bien.<br \/>\n&#8211; R\u00e9servez votre pr\u00e9paration au bas du r\u00e9frig\u00e9rateur 10 jours minimum (il faut compter jusqu\u2019\u00e0 3 semaines pour un magret bien sec).<br \/>\n&#8211; Pour finir d\u00e9coupez le magret de canard s\u00e9ch\u00e9 en tranches tr\u00e8s fines pour le service !
