Je n\u2019avais encore jamais test\u00e9 ces petites gousses odorantes, \u00e0 l\u2019odeur et la saveur piquante et poivr\u00e9e. Leur go\u00fbt rappelle le citron, le poivre et l\u2019eucalyptus. La cardamone est l\u2019un des ingr\u00e9dients essentiels de la cuisine indienne : elle entre dans la composition des curry, pilafs, garam massala et autres m\u00e9langes d\u2019\u00e9pices. Elle est \u00e9galement utilis\u00e9e au Moyen-Orient dans la pr\u00e9paration du caf\u00e9 et des p\u00e2tisseries, et en Scandinavie dans les charcuteries les pains, ou encore les desserts.<\/p>\n<p>J\u2019ai choisi de l\u2019utiliser dans une recette indienne particuli\u00e8rement adapt\u00e9e \u00e0 la chaleur de ces jours et \u00e0 l\u2019\u00e9t\u00e9 qui arrive : le\u00a0<span style=\"color: #339966;\"><strong>kulfi \u00e0 la cardamome<\/strong><\/span>, une glace tr\u00e8s parfum\u00e9e \u00e0 base de lait, d\u2019amandes fra\u00eeches et\u2026 de cardamone verte.<\/p>\n<h1><span style=\"color: #339966;\"><strong>Ingr\u00e9dients (pour 6 personnes) :<\/strong><\/span><\/h1>\n<ul>\n<li><strong>1 l de lait entier<\/strong><\/li>\n<li><strong>6\u00a0<a href=\"https:\/\/www.epicesdumonde.com\/epices-pures\/529-cardamome-verte-entiere.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #339966;\">cardamones vertes<\/span><\/a><\/strong><\/li>\n<li><strong>60 g de sucre en poudre<\/strong><\/li>\n<li><strong>25 g d\u2019amandes fra\u00eeches mond\u00e9es (ou non) hach\u00e9es<\/strong><\/li>\n<li><a href=\"https:\/\/www.epicesdumonde.com\/epices-pures\/529-cardamome-verte-entiere.html\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #339966;\">Cardamones vertes\u00a0<\/span><\/strong><\/a><strong>pour le d\u00e9cor<\/strong><\/li>\n<\/ul>\n<p>&#8211; Mettez le lait et les cardamomes ouvertes en deux dans une casserole \u00e0 fond \u00e9pais sur feu doux.<br \/>\n&#8211; Laissez bouillir en remuant, jusqu\u2019\u00e0 ce que le liquide ait r\u00e9duit d\u2019un tiers.<br \/>\n&#8211; Versez le lait en le filtrant dans un saladier, jetez les cardamomes.<br \/>\n&#8211; Incorporez le sucre et les amandes mond\u00e9es en remuant.<br \/>\n&#8211; Laissez refroidir.<br \/>\n&#8211; Transf\u00e9rez le m\u00e9lange dans un bac \u00e0 glace, couvrez et laissez au cong\u00e9lateur en remuant toutes les heures, jusqu\u2019\u00e0 ce que la pr\u00e9paration soit presque solide.<br \/>\n&#8211; R\u00e9partissez la cr\u00e8me glac\u00e9e dans 6 petits moules individuels et remettez au cong\u00e9lateur 30 minutes \u00e0 une heure.<br \/>\n&#8211; Sortez les glaces 15 minutes \u00e0 l\u2019avance, et d\u00e9moulez-les dans des petites assiettes de service.<br \/>\n&#8211; D\u00e9corez avec des graines de cardamomes.<\/p>\n<p><em>D&rsquo;autres recettes de Ma\u00ebliss \u00e0 retrouver sur son blog :\u00a0<a href=\"http:\/\/poire-chocolat.net\/\">http:\/\/poire-chocolat.net<\/a><\/em><\/p>\n<h1><em><strong><span style=\"color: #339966;\">Bon app\u00e9tit !<\/span><\/strong><\/em><\/h1>\n","protected":false},"excerpt":{"rendered":"<p>Cette semaine, c\u2019est la\u00a0cardamone verte\u00a0qui est \u00e0 l\u2019honneur !
